The William Tell Overture is sometimes associated with horses… like horse races. That is a classical piece. : )

“william Tell Overture” (Rossini) was used for the Lone Ranger
“Ride of the Valkyries” (Wagner) might work
Perhaps a waltz by Strauss?

The William tell is the first obvious choice. But have you considered pieces from Vivaldi or Mendelsohn?
